Dividing the contents down to a suitable dose for the cheese you are making today can, in part, be a bit of guestimation ... which is acceptable. We have been asked,"How much is a smidgen?" .....

From "WikiAnswers" we have ... "A tad, a pinch, a little, a dab, etc. There is no exact amount, it's just understood that it is a little amount."

Although elswhere, I have found ... "A Drop (1/64 tsp.), Smidgen (1/32 tsp.), Pinch (1/16 tsp.), Dash (1/8 tsp.), and Tad (1/4 tsp.)."

The main thing is if you use a "Smidgen", or a "Drop" this time, and it works, you can repeat the amount next time ....

Here is a tip ; .... create a "food diary", write down how your prepare your jams, pickles, and sauces, etc. and what ingredients you may change. Then later when you open your preserves, you can always look back, to find out what made this batch so special, or not, as the case may be.
