To do this you need a follower that will fit correctly on top of the cheese, inside the basket or hoop. You then need to apply the correct amount of weight to the cheese. The weight you apply will depend on the cheese you are making and in most cases you will start off with a smaller weight and increase over time. While cheese making is a process with a certain science to it, it is also an art, and your judgment and personal taste will play a roll in your cheese making, and this includes pressing the cheese. When you are first pressing cheese you are usually using just a kilogram or two of weight. This is easy to do as you can simply save an empty milk bottle and then put one or two litres of water in it and use it as a one or two kilogram weight, (like this). The problem becomes obvious when you have to have a much greater weight, as you cannot then use such a simple method. A cheese press can be used to create much greater weights. Many of the hard cheeses you can make with Ricki Carroll's "Hard Cheese Kit" require a final pressing weight of 50 pounds, or about 22 kilograms. It is not practical to use water bottles, books or other such items that are around your home. You will need a press that can create this pressure mechanically. We are pleased to be able to show you an incredibly simple way of pressing your cheese to a specific weight off 50 pounds.
When the spring is fully compressed the pressure applied is 50 pound. Do not worry though, if your press does not have this, as many presses do not have a way to tell what weight you are pressing at. This is OK, as with experience, you can judge the pressure as you are tightening the press down, by a combination of feel, and observing the whey start to flow. There is an art to this, and you will get the hang of it, the more you make cheese.
Green Living Australia's Own Cheese PressesThese simple cheese presses are made to suit cheese baskets and hoops up to 150mm wide, and 130mm high.
50 Pound Pressure Spring50 pounds is a frequently requested pressure for overnight application to hard cheeses. If you don't have a 50lb (22.7 kg) weight that is convenient enough to sit on top of your cheese hoop, or basket and follower, this is a very easy way to get the job done. You will know when the pressure is right, simply because this specially manufactured spring will give the required 50lb when the coils are are fully closed down.
